You can switch over to a virtual console by hitting Alt-F1 (or F2, F3,
etc.), or you can prevent X from starting at boot by changing your
default runlevel to 3, by editing the initdefault line to look like
this:

  id:3:initdefault:

Then you can start X manually when you want to by using the startx
command.
