Follow up - I tried the EaseUS Data Recovery Wizard.

I was able to recover what appears to be all the data. Unfortunately it did
not restore the folder structure. Thankfully, the vast majority of the
files were well named.

I’ll reach out to SanDisk and see if there’s a firmware update available.
